TOP TIPS FOR THE BEST BROWNIE RECIPE

  • If you don’t have an eight by eight inch pan for your brownies just use foil to create one or two walls for a smaller baking dish. Line with parchment and you’ll be good to go!
  • Measure your flour correctly! Adding too much flour to your brownies will take a way from that nice fudge-like texture. The best, and easiest way to measure flour is by using a scale. If you don’t have one then fluff your flour with a spoon, sprinkle it into your measuring cup, and use a knife to level it off. 
  • Don’t over-bake your brownies. Unlike cake layers brownies will not have springy center and a skewer inserted into the center will not come out clean. Your brownies are done when the center is set and you see the top just begin to crack. 
  • Add toasted nuts, crushed candy cane, toffee, or even candy like M&Ms to your brownies for a bit of crunch and flavor.
  • You can add either chopped chocolate or chocolate chips to the top of your brownies but this is totally optional. I’ve made the recipe both ways but found the brownies to be a bit more photogenic without the additional chocolate on top.

CAN I MAKE THESE WITHOUT AN 8×8 INCH PAN?

Sure! You can use a larger pan and have thinner brownies OR you can make a wall inside of your pan with aluminum foil then line it with parchment paper. If you look very closely in the photo for step seven below you can see that I did this!

WHAT’S THE BEST COCOA POWDER TO USE?

I love using a high-quality Dutch processed cocoa powder. Dutch processed cocoa powder is darker, less acidic and fudgier in baked goods making it PERFECT for brownies! My go to company is Valrhona but there are lots of great brands out there, including Callebaut, Ghirardelli and lots of organic and fair trade options too!

WHAT KIND OF CHOCOLATE IS BEST FOR HOMEMADE BROWNIES?

You have a wide range or chocolate to use for brownies but I suggest sticking with a bittersweet or semisweet chocolate. There’s enough sugar in the recipe so you don’t need a sweet chocolate too.

HOW LONG WILL BROWNIES FROM SCRATCH KEEP FOR?

Stored in a sealed container your uncut brownies will keep for up to four days in the fridge or 2 months in the freezer. Your cut brownies will last up to two days although they rarely last beyond a day if anyone knows they’re there! 

WHAT CAN I DO FOR AN EVEN FUDGIER BROWNIE?

Add an extra yolk for more creaminess and melt one cup of the chocolate with the butter, which you’ll then use in step one below. you can also slightly undercook your brownies so they’ll me even moister.

This easy chocolate cream cheese frosting recipe is addictively delicious and so quick to make!! It’s as easy to make as American buttercream but has an amazing depth of flavor thanks to the cream cheese AND it’s not as sweet.

WHAT GOES WELL WITH CREAM CHEESE FROSTING?

Carrot cake is a favorite paring with cream cheese frosting but red velvet cake might be the most popular. I think it goes well with vanilla cakelemon cake and even blueberry cake!!

SHOULD CREAM CHEESE FROSTING BE REFRIGERATED?

Because it’s packed with dairy, cream cheese frosting does need to be refrigerated. Just make sure to let it come close to room temperature before serving. Unlike other buttercreams it will not fully harden when chilled so you can pipe pretty soon after it’s been removed from the fridge.

CAN YOU DECORATE WITH CREAM CHEESE FROSTING?

Cream cheese frosting will pipe beautifully but it’s pretty soft. I find it works well for cupcakes, and sheet cakes but if you’re frosting a layer cake I recommend reducing the cream cheese and increasing the sugar to stiffen the buttercream and give it more structure.

CAN YOU COLOR CREAM CHEESE FROSTING?

Yes, you can color cream cheese frosting! I would recommend using gel food coloring if you can, which does not have as high of a liquid content, but this frosting actually colors quite easily.

HOW TO MAKE CREAM CHEESE FROSTING

  1. Start off by sifting the confectioners sugar into a large bowl so there are not any lumps.
  2. Cream the room temperature butter into a standing mixer on medium speed.
  3. Now add the cream cheese to the creamed butter and beat together until they’re combined. You can also incorporate the vanilla and a pinch of salt.
  4. Take a moment to hold off on the mixing and scrape down the bowl to make sure every little bit is incorporated.
  5. Add the sifted confectioners sugar in cups and mix until combined. If you’re wanting a thicker frosting, keep adding more confectioners sugar until it’s stiff.
  6. If you’re piping this frosting onto a cake or cupcakes; transfer it to a piping bag, snip off the tip and you’re ready to pipe. Enjoy!

Ingredients

  • 3/4 cup granulated white sugar
  • 1 cup brown sugar 200g, lightly packed1 cup brown sugar
  • 3 eggs room temperature
  • 3/4 cup cocoa powder
  • 1 cup flour
  • 1 teaspoon salt
  • 1 & 1/2 cups chocolate chips
  • 1 cup melted butter
  • 2 tbsp coffee
  • 1 tbsp vanilla extract
  • 3 sticks butter at room temperature
  • 1 & 1/2 pounds powdered sugar, sifted
  • 2 cups cocoa powder
  • 2 8oz blocks cream cheese at room temperature
  • 1 teaspoon vanilla extract
  • a pinch of salt
  • 4 cups crushed Oreo cookies
  • Halloween sprinkles
  • 1 package of gummy worms
  • Candy pumpkins
  • 5-6 cookies
  • Black piping gel

Instructions

  1. Preheat the oven to 350 degrees F and prepare your brownie pans.

For the Brownies

  1. You will need to make two batches or simply double the recipe since we will be using two brownie layers.
  2. In a large bowl, combine melted butter, eggs, vanilla extract, and coffee then mix together well.
  3. Add the white and brown sugars to the mixture and whisk together well.
  4. Sift cocoa powder, flour, and salt into the bowl and mix until just combined
  5. Toss in chocolate chips (or chunks) and fold into the batter.
  6. Add batter to pan and smooth to the edges. You can add more chocolate chips to the top before baking if desired.
  7. Bake for about 30 minutes or until the center is just set. You'll notice the center does not wiggle when the pan is moved.

For the Cream Cheese Frosting

  1. Sift confectioners sugar into a large bowl and set aside.
  2. Cream butter in a large bowl.
  3. Blend in cream cheese to the creamed butter.
  4. Add vanilla, cocoa powder, and a pinch of salt. Beat together.
  5. Add the confectioners sugar 1 cup at a time. Mix until combined. If you’re wanting a thicker frosting, keep adding more sifted confectioners sugar until it’s stiff.

Putting it All Together

  1. Top your first chocolate brownie layer with chocolate cream cheese frosting.
  2. Add a layer of 2 cups of crushed Oreo cookies followed by halloween sprinkles. Top with gummy worms.
  3. Add your top layer of chocolate brownie, inverted (this will help later). Cover your brownie with the remained of your chocolate cream cheese frosting.
  4. Top your brownie stack with the remaining 2 cups of crushed Oreo cookies.
  5. With black piping gel, pipe on some fun and festive tombstone messages onto your cookies. Press your cookies into the top of your brownie stack.
  6. Finish off your brownie graveyard with candy corn pumpkins and some more Halloween sprinkles.

Notes

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan, & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
