Welcome to the holidays! Where rich chocolate flavor of these chewy cookies resemble the deep chocolate flavor of my easy chocolate cake. Pour in a river of chocolate chips, a hint of peppermint, and you are on your way to the easiest, chewiest, yummiest cookies you will ever make for the holidays. Plus, if the holidays have you stressed, you’ll get a kick out of crushing some candy canes with your rolling pin that get sprinkled right on top for baking!

Chocolate Candy Cane Cookies

Chocolate Candy Cane Cookies

Prep Time: 5 minutes
Cook Time: 12 minutes
Additional Time: 5 minutes
Total Time: 22 minutes

Ingredients

  • 5 ounces milk chocolate chips
  • 1 stick butter
  • 1/2 teaspoon peppermint extract
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 2 eggs at room temperature
  • 1 cup white sugar
  • 1/2 teaspoon baking soda
  • 6 ounces dark chocolate chips
  • Crushed candy canes

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, whisk together your flour, cocoa powder, baking soda, and salt.
  3. In a heatproof bowl, melt you butter.
  4. Pour melted butter over milk chocolate chips and stir until smooth.
  5. In a separate mixing bowl, beat your sugar and eggs until light and combined.
  6. Add melted chocolate and peppermint extract.
  7. Blend on a low speed until fully incorporated.
  8. With your hand mixer on a low speed, gradually incorporate your flour mixture and blend until just combined.
  9. Fold in your dark chocolate chips.
  10. With a cookie scoop, drop 1 to 1 & 1/2 tablespoon sized cookie dough balls onto your parchment lined cookie sheet with about 2" of space between each drop.
  11. Sprinkle on crush candy canes onto each cookie dough ball, reserving some crushed candy canes for a later step.
  12. Bake your cookies for 12-14 minutes until the edges slightly firm. Keep an eye so your cookies don't accidently over bake. This will help the cookies stay deliciously chewy.
  13. Once your cookies have baked, remove from oven, and top with extra crushed candy canes.
  14. Allow cookies to cool completely before enjoying with a big cup of hot cocoa.

Notes

  • If you would like a non-chocolate cookie (if there was even such a thing), omit the 1/2 cup cocoa powder and replace with an additional 1/2 cup flour.
  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
