Crunchy, buttery, scrumptious, and so hard to have just one!

Today we are baking up a batch of scrumptious, easy to make, holiday cookies know as Russian Tea Cakes. Similar to Mexican wedding cookies and most commonly known as Snowballs, these classic cookies are filled with walnuts and coated in powdered sugar.

So what are Russian Tea Cakes? They are delicious and simple buttery cookies packed with chopped nuts for a great crunch and unique depth of flavor; an easy to remember recipe with just a few ingredients and so fun to make! Especially when stuffed with roasted hazelnuts, a thin wafer shell, and filled with hazelnut cream and chopped hazelnuts. Crunchy, buttery, scrumptious, and so hard to have just one!

Ferrero Rocher Stuffed Russian Tea Cakes

Ferrero Rocher Stuffed Russian Tea Cakes

Prep Time: 5 minutes
Cook Time: 15 minutes
Additional Time: 10 minutes
Total Time: 30 minutes

Ingredients

  • 1 stick butter at room temperature
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 cup flour
  • 1 cup finely chopped walnuts
  • Ferrero Rochers, unwrapped
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 325 degrees and line your cookie sheets with parchment paper.
  2. In a large bowl, beat your butter and sugar until light and fluffy.
  3. Follow with salt and vanilla while you continue to mix until fully combined.
  4. Slowly incorporate your flour and chopped walnuts while you continue to mix your cookie dough.
  5. Wrap your dough in plastic wrap and chill for 20 minutes.
  6. When ready to bake, grab your cookie dough and scoop out ping pong ball sized dough ball.
  7. Flatten your dough balls in your hands and press a Ferrero Rocher in the middle.
  8. Roll your cookie dough into a ball and place onto your prepared baking sheets.
  9. Bake your cookies for 14-15 minutes until slightly golden. Be sure to keep an eye on your snowballs so they do not brown too harshly and begin to crack.
  10. Once your cookies have baked, remove from oven and allow to cool for 5 minutes before dusting with powdered sugar.
  11. Once your dusted snowballs have cooled completely, roll your snowballs into more powdered sugar for an extra coat.

Notes

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
