Peek-A-Boo!

For Halloween this year, we are converting my simple sugar cookie recipe into spooky sugar cookies that are perfect for this time of the year. Everyone will be wondering jeepers creepers how’d you make these peepers!

Ingredients

  • 4 cups flour, sifted
  • 1/3 cup corn starch
  • 3/4 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup sugar
  • 2 eggs at room temperature
  • 1 teaspoon vanilla extract
  • Orange food gel color
  • Purple food gel color
  • Green food gel color
  • Eyeball sprinkles

Instructions

  1. Sift your the flour, corn starch and salt in a large bowl. Give it a whisk.
  2. In your standing mixer fitted with a paddle attachment, cream the butter and sugar together.
  3. Add the eggs while mixing. Scrape down sides of the bowl.
  4. Add 1 tsp vanilla extract.
  5. Pour in the flour mixture and mix until everything is well incorporated.
  6. Divide sugar cookie dough into three separate mixing bowls.
  7. Color each batch of sugar cookie dough with your purple, orange, and green food gel colors. I like to use at least 6 drops of food gel color when baking sugar cookies for a deep, rich color when baking.
  8. Put the dough in a plastic bag, flatten it together, then chill it in the refrigerator so it firms up.
  9. Once the dough is chilled, place it on a rolling matt, sprinkle with flour and roll out with a rolling pin. Move the dough around so to prevent it from sticking.
  10. Use a circular cookie cutter to cut out your cookies. Take away extra scraps to re-roll for more cookies.
  11. Place them on a non-stick baking sheet and bake at 375F for 12 minutes.
  12. Once you pull your cookies out of the oven, quickly decorate with eyeball sprinkles by pressing into the warm cookie with each eyeball.
  13. Let cookies cool for 5 minutes on cookie sheet before moving to a wire rack to cool entirely.

Notes

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
