Campfire S'mores Cheesecake

Campfire S'mores Cheesecake

Bring the great outdoors indoors with this simple, no bake Campfire S'mores Cheesecake.

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1 stick butter, melted
  • 1/4 cup sugar
  • pinch of salt
  • 1 sleeve of graham crackers, separated into sticks
  • 3/4 cup heavy cream
  • 1 1/2 cups chocolate chips
  • 2-8 ounce blocks of cream cheese at room temperature
  • 3/4 cup powdered sugar
  • 1 1/2 cup heavy cream at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Marshmallows

Instructions

  1. Grease your cheesecake pan and set aside. If preferred, you can also lay down cut to size parchment paper.

Making the Cheesecake Crust:

  1. Crush the graham crackers in a food processor until crumbs are fine.
  2. Combine crumbs with melted butter, sugar, and salt in a mixing bowl until well incorporated.
  3. Add crumbs to cheesecake pan, distributing evenly, and pressing down flat firmly. If you prefer, you can always have the crumbs go up the sides of the pan.
  4. Pour about half of the chocolate ganache over the crust.
  5. Line the pan with graham cracker sticks around the edges of the pan. You will want them standing to form a graham cracker wall.

Making the Chocolate Ganache:

  1. Place chocolate chips into a heatproof bowl.
  2. In a glass measuring cup, pour 3/4 cup of heavy cream and heat for 60 seconds in microwave.
  3. Pour hot heavy cream over chocolate chips and allow to sit for 1 - 2 minutes.
  4. Mix chocolate chips & heavy cream until fully combined and you are left with a silky smooth chocolate ganache mixture.

Making the S'mores Cheesecake Filling:

  1. In a large bowl, beat cream cheese for about 2 minutes until light and fluffy.
  2. Add sugar and combine.
  3. While mixing, gradually add cream and beat on a high speed until still peaks begin to form.
  4. Add vanilla and then stir to combine.
  5. Pour cheesecake batter over the chocolate ganache in the cheesecake pan.
  6. Smooth out with a spatula before topping cheesecake with remaining chocolate ganache.
  7. Top with marshmallows.
  8. Freeze for at least 2.5 hours. If preferred you can also let cheesecake chill and firm in refrigerator for at least 6 hours or overnight.
  9. Before serving, broil cheesecake for 90 seconds until marshmallows on top of cheesecake are golden. If able, you can also toast marshmallows with kitchen torch.

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
