Just enjoying my unofficial PSL!

Whether you hate to love it or love to love it, the PSL is the true herald of the Autumn Season. This beverage has become a staple in pop culture. A phenomenon the moment that first leaf hits the ground. usually in August you can find me at my local Starbucks (cue theme song from Cheers) asking when I can have a pumpkin spiced latte because I can smell the clove coming from their back room. Thankfully until then, we have my PSL cake that captures everything you and I love about our favorite go-to Starbucks drink come Autumn.

The "Unofficial" Starbucks #PSL Cake

Yield: 2 8-Inch Layers
Prep Time: 10 minutes
Cook Time: 40 minutes
Additional Time: 15 minutes
Total Time: 1 hour 5 minutes

Ingredients

  • 1 & 2/3 cups white granulated sugar
  • 1 cup vegetable or canola oil
  • 15 ounces pumpkin puree
  • 4 eggs at room temperature
  • 2 cups AP flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 - 8 ounce blocks cream cheese at room temperature
  • 2 sticks butter at room temperature
  • 2 teaspoon vanilla extract
  • 3 cups sifted powdered sugar
  • Powdered sugar, for dusting

Instructions

Making the Pumpkin Spice Cake:

  1. Preheat oven to 350 degrees.
  2. Whisk together your sugar, oil, & pumpkin until well incorporated.
  3. Add in eggs and stir until smooth.
  4. In a separate mixing bowl you want to whisk together your flour, cinnamon, nutmeg, ginger, cloves, baking powder, baking soda, & salt.
  5. Slowly add your dry ingredients into your wet ingredients.
  6. Pour mixing into your prepared pans.
  7. Bake for 35 - 40 minutes or until your cake tester comes out clean.
  8. All cake to cool in pan for 5 minutes before removing and cooling completely.

Making the Cream Cheese Frosting / Filling:

  1. In a bowl, add your cream cheese, vanilla extract, and butter.
  2. Cream together on a high speed until light and fluffy.
  3. Add in your powdered sugar and mix on a low speed until fully incorporated.
  4. Once sugar is full combined, beat on a high speed for one minute. If you prefer a thicker cream cheese frosting, feel free to add more powdered sugar 1/8 of a cup at a time. You may need to the slightest pinch of salt to cut any sweetness.
  5. If you're adding additional cake layers, be sure to alter your ingredients to suit your needs.

Putting It All Together:

  1. Level your cakes.
  2. Add a generous amount of cream cheese filling on top of your first layer.
  3. Top with your next layer of cake.
  4. Dust with powdered sugar and add some cream cheese dollops on top.
  5. Slice, serve, and enjoy!

Notes

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
