Rainbow Cupcakes

Rainbow Cupcakes

Bite into the rainbow with Rainbow Cupcakes!

Ingredients

  • 2 sticks butter at room temperature
  • 2 1/3 cups white sugar
  • 5 eggs, egg whites only at room temperature
  • 1 tablespoon vanilla
  • 3 cups flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups whole milk at room temperature
  • 2 sticks butter, room temperature
  • 4 cups powdered sugar, sifted
  • 1 tablespoon clear vanilla
  • 3 tablespoons whole milk or heavy cream
  • Pinch of salt (to cut sweetness)

Instructions

How to Make Rainbow Cupcakes:

  1. Preheat oven to 350 degrees.
  2. Beat butter & sugar until light in color on a medium speed for a good 3 minutes.
  3. Add egg whites & vanilla, mixing until fully combined.
  4. In separate bowl, whisk together flour, salt, & baking powder.
  5. Add both flour mixture & milk into the butter mixture by alternating 1 cup flour and ½ cup milk at a time.
  6. Divide batter between 6 bowls.
  7. Color each bowl of batter with rainbow colors (food gel coloring is a great choice) or any colors you’d like & mix until the colors are fully incorporated.
  8. Add a thin layer of your batters into your cupcake pan in the pattern you like best.
  9. For these cupcakes I went bottom to top starting with violet & moving to blue, green, yellow, orange, red.
  10. Bake cupcakes for 20 minutes or until your cake tester comes out clean.
  11. Allow to cool to room temperature before frosting & decorating.

How to Make Cloud Frosting:

  1. Whip butter in stand mixer with paddle attachment, or with a hand mixer, until butter is white in color.
  2. Add vanilla.
  3. Alternating between powdered sugar & milk, add 1 cup powdered sugar & 1 tablespoon of milk at a time. Be sure to mix on high after each addition.
  4. Take your vanilla cloud frosting & top each cupcake with a generous amount.

Notes

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
