Banana Chocolate Chip Peanut Butter Cake

Banana Chocolate Chip Peanut Butter Cake

Yield: 2 8-Inch Layers
Prep Time: 5 minutes
Cook Time: 30 minutes
Additional Time: 10 minutes
Total Time: 45 minutes

Taking banana, peanut butter, & chocolate and putting them all together into one tasty cake!

Ingredients

  • 2 sticks butter at room temperature
  • 1 cup sugar
  • 2 eggs at room temperature
  • 3 bananas, mashed
  • 1 3/4 cups flour
  • 1/2 teaspoon salt
  • 2/3 teaspoon baking soda
  • 5 tablespoons buttermilk at room temperature
  • 2/3 cups chocolate chips
  • 1 1/2 sticks softened butter
  • 3 3/4 cups sifted powdered sugar
  • 3/4 cup peanut butter
  • 1/2 cup milk
  • 2 teaspoons vanilla

Instructions

  1. Banana Chocolate Chip Cake Steps:
  2. Preheat oven to 350 degrees.
  3. Whisk together flour, salt, & baking soda.
  4. In separate bowl, with hand mixer, cream butter & sugar until light & fluffy
  5. Mix in eggs one at a time.
  6. Add vanilla.
  7. Add mashed bananas and mix until just combined.
  8. Fold in chocolate chips.
  9. Bake for 30 - 35 minutes or until your cake tester comes out clean.
  10. Let cake cool in pan for 15 minutes & then invert onto cooling rack to continue to cool.
  11. Peanut Butter Frosting Steps:
  12. While cakes cool, prepare your peanut butter frosting by adding butter into a bowl and beating until light & fluffy.
  13. Add in milk & vanilla.
  14. Add 1 cup of powdered sugar and begin to mix on a low speed.
  15. Add remaining powdered sugar, 1 cup at a time, while mixing under all has been added. (see notes)
  16. Add peanut butter.
  17. Mix on a high speed for close to 5 minutes until light & fluffy.
  18. Cake Assembly:
  19. Level cakes & place bottom layer on cake stand.
  20. Add peanut butter frosting and top with layer of cake. (see notes)
  21. Top with dollops of peanut butter frosting, sliced bananas, & chocolate chips.

Notes

    • Continue layering cake and peanut butter frosting until you've reached your desired height in layers.
    • If you'd like to cover your cake with peanut butter frosting, be sure to add more powdered sugar while preparing your frosting. I suggest adding in the additional powdered sugar 1 cup at a time.
    • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
    • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
