Chocolate Avocado Cake

Chocolate Avocado Cake

Yield: 2 8-Inch Layers

It’s chocolate. It’s Avocado. Can we ask for a better pairing?

Ingredients

  • 6 ounces dark chocolate chips
  • ¼ cup cocoa powder
  • 2 cups fresh brewed coffee
  • 3 cups flour
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • ¼ vegetable oil – or coconut oil if you want to add a tropical flavor
  • 3 tablespoons fresh brewed coffee
  • 1 avocado
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup wheat flour
  • 1 1/3 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 3/4 cup white sugar
  • 1/3 cup coconut oil, melted
  • 1/2 cup avocado, mashed
  • 3 egg whites at room temperature
  • 2 teaspoons vanilla
  • 1/2 to 1 cup chocolate chips
  • 1 stick butter at room temperature
  • 1/2 cup vegetable shortening
  • 3/4 cup cocoa powder
  • 1 teaspoon vanilla
  • 4 cups powdered sugar, sifted
  • 4 tablespoons heavy cream

Instructions

  1. Chocolate Avocado Cake Steps:
  2. Preheat oven to 350 degrees and prepare your cake pan(s).
  3. In a heatproof bowl stir together your chocolate, cocoa powder, and 2 cups of hot coffee.
  4. In another bowl, whisk together your flour, cinnamon, salt, baking soda, & baking powder.
  5. With your third mixing bowl, blend your avocado, vegetable oil, 3 tablespoons of hot coffee, and both your sugars on a low speed.
  6. Add the chocolate mixture to avocado mixture and incorporate together on a low speed.
  7. Add your chocolate avocado mixture to the dry mixture.
  8. With your hand mixer, combine all together on a low speed until your batter is smooth.
  9. Pour your batter into your prepared pan(s) and bake for 45 minutes or until a cake tester comes out clean.
  10. Once baked, allow cake to cool before leveling.
  11. Chocolate Buttercream Steps:
  12. Sift 4 cups of powdered sugar into large mixing bowl and set aside.
  13. Cream together both butter and shortening with stand mixer.
  14. Add in cocoa powder & vanilla.
  15. Scrape down the sides.
  16. With your stand mixer, or hand mixer, on the lowest speed setting, gradually add in your powdered sugar 1 cup at a time.
  17. As you continue to add in powdered sugar, your buttercream will begin to appear dry and crumbly.
  18. After all the powdered sugar has been added, slowly add in your heavy cream 1 tablespoon at a time (you may not need the full amount).
  19. Turn mixer up to a medium speed and mix for a quick minute until light & fluffy.
  20. Chocolate Avocado Cookie Steps:
  21. Preheat oven to 300 degrees and line cookie sheets with parchment paper.
  22. In a bowl, whisk together both flours, cocoa powder, baking soda, & salt.
  23. In a separate bowl, mix both sugars while slowly adding in coconut oil.
  24. Add in avocado, egg whites, and vanilla.
  25. Blend all together on a low speed until smooth.
  26. Add flour mixture and chocolate chips.
  27. Blend on a low speed until dough is just combined.
  28. Chill dough for 1 hour.
  29. Roll dough into balls and place on cookie sheet. If you’d like a flatter cookie, press down gently with the bottom of a glass or measuring cup.
  30. Bake for 20 minutes.
  31. Putting It All Together (see notes):
  32. Give a generous amount of buttercream between each layer. If you’re adding more layers, simply repeat. If you’d like a covered cake, simply spread & smooth your chocolate buttercream on the outside of your cake and smooth with a flat edged cake comb.
  33. (If using chocolate avocado cookies) Feel free to add crushed chocolate avocado cookies between each layer and top your cake with whole chocolate avocado cookies.

Notes

  • The avocado cookie decorations and even the chocolate buttercream are optional. The cake itself is just as delicious by itself.
  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
