Melted Peanut Butter Ice Cream Cookies

Melted Peanut Butter Ice Cream Cookies

Prep Time: 45 minutes
Cook Time: 15 minutes
Additional Time: 10 minutes
Total Time: 1 hour 10 minutes

Grab a pint of your favorite peanut butter ice cream. Actually grab two!

Ingredients

  • ½ cup melted butter
  • 1/3 cup white sugar
  • ½ cup brown sugar
  • ½ cup peanut butter ice cream – or your favorite flavor
  • 1 egg at room temperature
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups flour
  • 2 cups chocolate chips

Instructions

  1. Add both sugars into mixing bowl & pour in melted butter.
  2. Mix on low until combined.
  3. Add ice cream & mix until smooth.
  4. Add egg and vanilla & mix on low.
  5. Add baking soda & salt while mixing on low.
  6. While mixing on low, slowly add in flour.
  7. Mix until dough comes together.
  8. Add in chocolate chips & stir.
  9. Cover bowl & chill for 1 hour in fridge or 30 minutes in freeze.
  10. Preheat oven to 350 degrees.
  11. Place dough balls, with space between, onto a lined cookie sheet.
  12. Feel free to press down dough balls for a more flatter cookie.
  13. Bake for 12 – 15 minutes or until edges start to golden.

Notes

  • Want to get creative with this recipe? Swap out the peanut butter ice cream with any and all the ice cream flavors you can imagine.
  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
