If strawberry lemonade was a donut, this would be it. A Lemon Drizzled Strawberry Donut is not only wonderful with a cup of coffee, but a quick and tasty snack for any occasion — like writing a blog post about Lemon Drizzled Strawberry Donuts.

Strawberry Donuts with Lemon Drizzle

Strawberry donuts will be your next guilty pleasure!

Ingredients

  • 1 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/3 cup white sugar
  • 3 tablespoons butter, melted
  • 1 egg at room temperature
  • 1/2 teaspoon vanilla
  • 3 tablespoons Greek yogurt at room temperature
  • 1/4 cup + 1 tablespoon milk at room temperature
  • strawberries
  • 2 cups powdered sugar
  • Juice and zest from 1 lemon

Instructions

  1. Preheat oven to 350 degrees.

Making the Strawberry Donuts

  1. Whisk together flour, baking powder, baking soda, salt, and sugar until combined.
  2. In a separate bowl, beat together the egg, milk, plain yogurt, and vanilla until batter is smooth.
  3. Mix your wet ingredients into your dry ingredients.
  4. Mix on a low speed until just combined.
  5. Stir in strawberries.
  6. Fill each donut pan well, leaving about 1/2 an inch gap between the batter and the pan rim.
  7. Bake donuts for 10 minutes.
  8. Once baked, remove from oven and allow to cool in pan for 5 minutes before removing.

Making the Lemon Glaze

  1. In a mixing bowl combine sifted powdered sugar, lemon juice, and lemon zest until glaze is smooth. If you would like a thicker glaze, you can add more powdered sugar at 1 tablespoon intervals.
  2. Drizzle each donut with lemon glaze, serve, and ENJOY!

Notes

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
