Cookies & cakes & brownies oh my! It’s been quite the holiday season with so many sweets. Let’s give our sweet tooth a break, sizzle up some bacon, and dive into my go to brunch idea; especially for the morning after Christmas – Bacon Cheddar Scones.

Cheesy Bacon Scones

Prep Time: 20 minutes
Cook Time: 18 minutes
Additional Time: 10 minutes

Give that sweet tooth a break and grab something savory.

Ingredients

  • 3/4 cup butter, cubed & cold
  • 2 cups whole wheat flour
  • 1 cup all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 egg at room temperature
  • 1 cup buttermilk at room temperature
  • 1/4 cup buttermilk for brushing
  • 1/4 cup of bacon drippings for brushing
  • 3/4 cup preferred cheese for dough
  • 1/4 cup preferred cheese for topping
  • 1/2 pound bacon, cooked & crumbled

Instructions

  1. Preheat oven to 300 degrees and prepare you baking sheet.
  2. Add your dry ingredients to your mixing bowl and give a good whisk until fully incorporated.
  3. Using a pastry cutter, cut the butter into the dry ingredients until it resembles moist, crumbly sand.
  4. Make a well in your dry mixture and add in your wet ingredients.
  5. Blend wet and dry ingredients together until you have a soft dough ball that holds its shape.
  6. Once your dough starts to come together, add in your bacon and choice of cheese.
  7. Work the bacon and cheese into the dough.
  8. Once your dough has fully come together, turn the dough ball out onto a floured surface.
  9. Kneed your dough for 10 minutes and work into a ball.
  10. Cut ball in half and work each half into an 8 x 8 disc.
  11. Cut each disc of dough into wedges.
  12. Place wedges onto baking sheet with 1 inch of space between.
  13. Brush each wedge with bacon drippings and buttermilk.
  14. Sprinkle on more cheese.
  15. Bake in oven for 18 minutes or until the edges are golden.
  16. Once baked, remove from oven and allow to cool on pan.
  17. Serve warm and enjoy!

Notes

  • You can spruce these up with any meat, cheese, or extras that you'd like. This recipe is so versatile.
  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
