Nothing says holidays like red velvet & cream cheese frosting!

With the holidays right around the corner, I’v decided to share with everyone my all time favorite cookie. Well, my all time favorite cookie cake. Red & green velvet with yummy cream cheese frosting layers. I hope you all enjoy it as much as I do!

Red Velvet Cookie Cake

Nothing says holidays like red velvet & cream cheese frosting!

Ingredients

  • 1 1/2 sticks of butter at room temperature
  • 1 cup of white sugar
  • 1 egg at room temperature
  • 1 teaspoon of vanilla
  • 2 teaspoons of white vinegar
  • 1 1/2 tablespoons of red food gel coloring
  • 2 1/4 cup + 2 tablespoons of all purpose flour
  • 2 teaspoons of cornstarch
  • 1 teaspoon of baking soda
  • 1 tablespoon of cocoa powder
  • 1/4 teaspoon of salt
  • 1 8-ounce block of cream cheese at room temperature
  • 1/2 stick of butter at room temperature
  • 2 1/2 cups of powdered sugar, sifted
  • 1 teaspoon of vanilla
  • festive sprinkles

Instructions

  1. Preheat oven to 350 degrees and prepare you 9" cake pan(s) per your usual preference.

Red & Green Velvet Cookies

  1. In a large mixing bowl, cream your butter and sugar together until light and fluffy.
  2. Add in egg, vanilla, white vinegar, and red food gel color.
  3. Mix until combined and color has been fully incorporated.
  4. In a regular sized mixing bowl, whisk together the flour, cornstarch, baking soda, cocoa powder, and salt.
  5. Add dry ingredient mix to wet ingredients and mix until fully combined.
  6. Cover cookie dough with plastic wrap and cool for 30 minutes.
  7. Follow steps 1 through 6 for additional red and green red velvet cookie layers. For this red velvet cookie cake, I made two layers of red and two layers of green.
  8. Take your chilled cookie dough and press firmly into cake pan. You'll do this for each cookie layer in separate pans or bake one cookie layer at a time if using one pan.
  9. Bake cookie layers for 20 minutes or until edges are slightly firm.
  10. Remove your cookie layers and allow to cool in cake pan for 5 minutes before removing and allowing to cool entirely.

Cream Cheese Frosting (see notes)

  1. In a large mixing bowl, beat the cream cheese and butter on high until silky smooth.
  2. Slowly add in the powdered sugar while mixing on a medium speed.
  3. Once all the powdered sugar is incorporated, blend in the vanilla on a high speed.

Cookie Cake Building

  1. Spread a generous amount of cream cheese frosting on your first cookie layer.
  2. Follow with sprinkles.
  3. Repeat steps 1 and 2 for all of your desired layers. I did four layers in total: 1 red velvet cookie layer, cream cheese frosting, sprinkles, 1 green velvet cookie layer, cream cheese frosting, sprinkles, another layer of red velvet cookie, cream cheese frosting, sprinkles, last layer of green velvet cookie, cream cheese frosting, and sprinkles.
  4. Slice, serve, and enjoy!

Notes

  • If adding green layers to your cookie cake stacks, swap out 1 & 1/2 tablespoons of red food gel coloring for green.
  • Cream cheese frosting ingredients are enough for 1 layer. Multiply ingredients by number of layers so you have enough for each.
  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
