Even donuts can have an Autumn makeover!

  • 8 ounces of pumpkin puree
  • 2 eggs at room temperature
  • 1/2 cup of vegetable oil
  • 1/3 cup of water
  • 1 & 1/2 cups of granulated sugar
  • 1 & 3/4 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 3/4 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cloves
  • 2 cups of powdered sugar, sifted
  • 3 tablespoons of maple syrup
  • 1/2 cup of chopped pecans (or walnuts will work just as well)

  1. Preheat your oven to 350 degrees.
  2. Mix tougher pumpkin, eggs, oil, water, sugar, baking soda, salt, cinnamon, nutmeg, and cloves with a whisk until well blended.
  3. Add flour and mix until just combine.
  4. Fill a piping bag, or ziploc bag, with batter. If using ziploc bag, snip a small piece of the corner off to allow for piping.
  5. Pipe the batter into greased donut pans. Filling halfway.
  6. Bake donuts for 10 - 15 minutes or until the donuts spring back when touched.
  7. While donuts are baking, mix powdered sugar and maple syrup to reach a honey like consistency.
  8. Dip the tops of the donuts into the icing and top with crushed pecans while donuts are still warm.
  9. Allow donuts to cool and then enjoy.

  • Room Temperature Ingredients: Be sure to allow your dairy ingredients to reach room temperature. Room temperature ingredients not only combine more effortlessly (no over-mixing needed) but they also trap air so much better. This trap air will expand and produce a fluffy texture during your baking process.
  • Prepared Pan: There will always be the "next best way to prepare your pan" article. Simply put however, the most effective way i find in my kitchen is a light rub of shortening around the sides, parchment paper on the bottom of the pan (for majority of baking pans), & a very light dusting of flour (cocoa powder for chocolate baked goods) all throughout.
